I must say that this is something i managed to do this on another PC (not by my choice but because of some error - probably i plugged the power button where i shouldn't on the mobo): make it reboot if there's a blackout. I mean, it boots as soon as the power comes back in.
I am trying to find a way to reproduce this behaviour my server too.. Do you have any suggestion? I am almost clueless on the reason why my other pc boots as soon as it gets power (even if i use the PSU's switch)..

There should be a setting in the bios if your system supports it. The setting is under power. It is more a function of the system/bios than the OS. Most newer (last couple of years) systems have a setting for this.

Regards.

This is a BIOS option on many machines "Restart on AC power restore" or some such. If that isn't available, but your machine can do "wakeup at time", then just set it to wake up every day at midnight or something, so it won't be down for more than 1 day.

If it's a machine used as a server, you could set up wake-on-LAN, so it wakes up the first time it is needed after a forced shutdown

Aside from WOL, I know of no OS-level solution.

Do note that if you have several computers, it generally isn't a good idea to do this for more than 1 or 2. Several computers powering on at exactly the same time can take the power right back out.
