I just did it at my job on an AIX server. How do I enable it in gentoo? Cannot be that hard, I assume that I edit a conf file???!!!

You will need edit the sendmail.cf file that is located in the section that begins with DS and edit as follows:
DShost.domain.com
with the 'host.domain.com' being the fully qualified host name of the mail server that you will be "relaying" mail messages to.
refresh -s sendmail |

or, if you need less features than sendmail, try ssmtp
