which iso do you suggest me to install Gentoo on my old Sun Ultra10 sparc64
PC ?

look at the https://www.gentoo.org/downloads/#sparc, there is only one iso out there, just try it

I try to install from minimal-cdrom, and then stage3, but I dont find portage

and I think having only 640MB of ram the compilations would be very slow

do you remember which loader do you use? silo or grub?

have you any examples of that configurations?

silo for sure, I can't remember the details, I was following the manual at the time, and there shouldn't be anything special about the configuration.
