Best option for encrypting drive

I have a remote backup location I am using. At this location I have a Raspberry Pi 3 B+ connected to an external 4 TB hard disk. The backups themselves are encrypted, but I would like to take it a step further and encrypt the drive too.

I can probably throw a dart and hit a random disk encryption to use, but I wanted to get some opinions first.

You have to set up LUKS before moving any files to it.
