Is it normal to not see a specific option for AMD ryzen when configuring kernel? I have a ryzen 9 5950x and currently have my kernel set to "Generic-x86-64" as shown in the screenshot at https://ibb.co/qrF8cRM

I followed the gentoo handbook for download/configuring/compiling kernel.

If you use sys-kernel/gentoo-sources with the experimental USE flag you will get options for the AMD CPU.

Yes.
The kernel developers only support fairly generic kernels - the list you see in the standard configuration menu. I guess it's to reduce the number of variants they have test/have hardware to test on. As jburns says, you can add the experimental flag to apply patches to allow a greater range of cpu types, but AFAIK the developers consider the resulting kernel unsupported.
(As it happens, I specify KCFLAGS="-march=native", which is another way to generate an unsupported kernel.)

Ultimately, it will be more important to set your CPU flags correctly than to have specific processor support within the kernel. You can use the `cpuid2cpuflags` to help determine them for you, or you can just do a `cat /proc/cpuinfo | grep 'flags'` to see the capabilities.
