Do you have the 5.10.11 kernel tree dir in /usr/src?
If yes then go ahead and build it.
I think the conflicting files are a result of a "git clone" of rpi firmware or rpi kernel sources.

and blubberbaer is using default/linux/arm64/17.0. That's 64 bit.

Where do you get sys-kernel/raspberrypi-kernel from, it's not in ::gentoo?
The ::gentoo repo has sys-kernel/raspberrypi-image and sys-kernel/raspberrypi-sources. Neither have a bcm2711 USE flag.

Beginning with the 5.10 kernel, the mainline kernel "mostly works" on the Pi 4 too.
