I'm curious, is it possible to get prompted for a pass when selecting to run programs from gnome's menu that require root privs? Like firestarter and gdmsetup? It just tells me I need to launch as root, so I end up opening a terminal and launching from sudo.

I believe you can use gnomesu.
In your menu you can put gnomesu firestarter. Then when you launch it will ask you for the root password and then run firestarter as root.
I am not 100% on the syntax though but it should work fine.
