I have install profile /default/linux/23.0/desktop
can I change to /default/linux/amd64/23.0/desktop/plasma
without any trouble ?

Hello,
You will have your answer and process onthis page subsection: https://wiki.gentoo.org/wiki/Profile_(Portage)#Switching_between_profiles, but in the same time I recommand you to read https://wiki.gentoo.org/wiki/Profile_(Portage) (the whole page), at least to understand a bit more portage and it's profile. No needs to understand everything, like doing your own profile, that is just good for your Gentoo's culture.
Mostly, profile are a pre-sets of USE flag that'll ease for you the access to a working desktop for example.
If you want to use Plasma, that is yes the good profile.
Also, it could be good to do a backup of your root before doing such operation, in case of problem it could save you some hours of fixing.

Thank's Kevin I have change the profile to desktop/plasma now
but I don't seems to get graphics to work I have install XORG WIKI when I install x11-wm/twm and x11-term/xterm I get 3 graphics display
and I have also installed SDDM but when I start it is only black screen
