I need to know if the grub-mkcfg needs the ESP to be mounted or does that only look for the /boot/grub.cfg file and goes from there?

| Assuming ESP and boot are different partitions then, no, grub-mkconfig does not care about the EFI partition. I only need to mount /boot. |
