I would like to change the output I get from uname uname -s, -o and -r
And would like it to not say more about the system to netcraft.com, or say that it is a Unix not Linux. |

Look in the kernel documentation for where these values are set during kernel building.
At least one is dependent on the system you build it on.

Netcraft ?
What does that have to do with the kernel ?
You can decide for yourself what apache reports to web clients, man httpd.conf et al. |
