Ive currently got windows 2k installed on my larger hard drive ... ive left space for the install of Gentoo on the same disk, but its not totally obvious to me at the moment if i can just boot from the gentoo CD and install and it will take care of my booting options... so i can choose the OS at startup (?)
Im not planning to custom/compile anything... but im looking to install most of the packages ... so is this just a stage 3 install?

Just follow the Gentoo instilation guide, and be sure to tell your bootloader that there's already an OS on hda1. I did this successfully with XP on my laptop.
This is how my HD is set up:
hda1: Windows
hda2: /boot
hda3: Swap
hda4: /
I use lilo, so if you want to see my lilo.conf look here
