I accidently switched off the gui how can I get it back?

Normally you have to start the gui by yourself typing "mlgui". But you also can select that it will be started automatically in .mldonkey/downloads.ini by changing start_gui = false in start_gui = true. The directory .mldonkey should be in /home/p2p.

If you want to be asked for it change
ask_for_gui = false in start_gui = true
