I have got gentoo installed on a disk, and have decided to use another disk to mirror (RAID 1) the first one which already has running gentoo on it. I've got VIA8237 raid controller and 2 sata disks. How do I go about getting this done without a new reinstall?

If the disk gentoo is on is going to be included in the raid, you have to reinstall. Raid requires a special file system and you have to re-format both drives. I'm unfamiliar with how to do a software RAID in Linux, someone else will have to tell you. The easiest way to do RAID is with hardware. If your motherboard has a good RAID controller you can use it to set up both the drives so that linux will recognize them as a single drive. Then just put your favorite file system on that single drive and you're all set. Theoretically anyways.

I have got another question: In Bios it says that the 2 disks are set up in an array, should I disable the array and make them just 2 standalone disks?

yes, if you are going to use software raid, the arrays should NOT be defined in the raid bios. Just set partitions type as said in the howto i posted above.

Do you have raid support via hardware too???

regards
