Now it gets past that (after fidling with bios settings) but it gets stuck and says "fatal exception in interupt not syncing"

It should also give a stack trace, problem is that since it's a boot CD I don't think it actually starts a syslogger, and even if it did, it doesn't sync so there is no way to capture the trace. You have two choices imho:

1) Try using another boot cd (like knoppix).
2) Try to analyse the stack trace to see what is going wrong (or post the trace - enjoy the typing ...).

No 2 is only feasible if it gives you function names, and even then it only gives one a rough idea of whats up. Since it's inside an interrupt handler I would immediately be suspect of controller issues (ie, scsi/ide controller) or network issues (try swapping out the card, I had some really ugly problems with LG, Acton and SMC cards giving this problem when receiving packets - and timeouts when transmitting, now using two eepro100 cards and all my problems magically disapeared).

Okay I'll disable the NIC and if that works try to find another one. I'm sure I got one around here somewhere. Thanks... I guess I should download knopix... How would i go about setting up linux if I started with knopix?

Exactly the same. The startup is the only thing that differs (as in different splash screens/auto detection) - and no, I'm not joking. Oh yes, and the initial stages is not available on the knoppix cd - obviously. Which might be problematic for some people. Other than that it is exactly the same iirc. Anyway, the time your outside of the chroot is so short that if there is any differences it will only be during about the first 5 to 10 minutes of configuration.

Oh, boot knoppix as "knoppix 2" to ensure that you don't get a gui (it chows up precious RAM).

When I disable the NIC I get the same problem as I was having before. It hangs when finding one of the SCSI cards.

Eek. That is not good. You say "one of the scsi cards" ? Can you pinpoint exactly which one?

Right, as hard as it is for me, I have to admit defeat. I'm out of my depth - good luck. Try the knoppix aproach, other than that I have no ideas.
