What is the best disk partitioning for web and mail server for 80 G?

there is no such thing as the best partitioning.

if you are not sure how to build up the partitions, then maybe something like lvm2 would be a good approach.

Simple is good. It's probably best to stick with:

/boot
/
/var


Having a separate /var keeps your logs from filling up your root partition. Depending on where you store your mail you'd want to isolate that partition as well (it's usually on /var as well, but not always). Size-wise, you shouldn't need more than 10 GB or so for the web and mail partition unless you are planning on a serious machine.
