How do I enable hinting (aka. bytecode interpreter) when I emerge freetype?

pre freetype-2.1.2-r2 ebuilds have the bytecode interpreter enabled by default I believe. In freetype-2.1.2-r2 you can enable the interpreter by un-commenting lines 26-29 of the ebuild, but with the new auto-hinter patches in freetype 2.1.2-r2, the fonts look better than they did with the interpreter anyway(only one can be used at a time). Using the auto-hinter also avoids the legal grey area surrounding the bytecode interpreter.

Hmm... I seem to have 2.1.2-r1. I'll try 2.1.2-r2 and see if it's better. Do you know if I need to re-emerge xfree after emerging freetype, or is xfree dynamically linked to freetype now?

No, it isn't necessary to re-emerge XFree. The two packages do not interact.

Allow me to clarify. XFree's font engine is built statically upon freetype (at least in Gentoo), but the XFree sources have always provided their own Freetype sources which have nothing to do with the freetype ebuild. XFree also usually lags way behind mainstream freetype releases. The good news is that the Gentoo guys found a way of patching in newer versions of freetype and if you look at the ebuild for XFree you can see that they are doing just that (2.0.9 last time I looked). If you want to compile XFree against your emerged freetype (i.e. dynamically) then have a look at this old thread of mine: https://forums.gentoo.org/viewtopic.php?t=2233. The last post on that thread explains how to do it. BTW, I never tried ... perhaps you could share your experiences if you do ... :-)
