How do you set-up a simple mail server for around 10 users, I have a domain name and I would love to have a mail server set-up for my network and I can't seem to find anything about mail server set-up by google-ing it!

The Gentoo Docs that orion2012 pointed out are the best ones by far. But if you're looking for extra bells/whistles or you want an alternative way to install, the Gentoo Wiki has some awesome help too on the subject.

Part 1
All about getting postfix + courier-imap working

Part 2
Fancier - anti-spam, squirrelmail, etc.

I used a mixture of all of those docs to get mine set up.

Arg, check your use flags very carefully... And maybe try an emerge sync to make sure you have the latest ebuilds. I ran into a problem not with sasl, but with mysql, and it turned out I had a bad ebuild that had been corrected shortly after i synced.
