I want to completely start over on my ldap tree. There is nothing in it except for a few initialization parts so I just want to start over with my ldap tree. How is this done?

Just delete the content of the directory where your /etc/openldap/slapd.conf is pointing to.

Look for a line: directory /..../

That's your baby.
