if i choose a kernel for my gentoo system... say benh (for ppc) will i later be able to switch to an entirely different kernel without losing saved files and such?

The kernel is totally separate from the mass storage devices. If you have more than one kernel installed, that's okay, each kernel will access your hard drives the same way, so nothing will be lost. I have 6 or 7 kernels compiled on this machine I believe.
