Today I tried to compile the latest wolk release. Everything compiles fine with no errors but when I boot it, it gets as far as
"uncompressing kernel.... ok, booting wolk4"
and everything freezes, no disc activity so I have to hard-reboot the machine.
Any clues???

Probably not much help ......however I manually compiled the 3.8 version (after the ebuild didnt want to ) and found that intermitantly the screen wont come up after starting X (ie flashes and thats it) usually starts fine first boot but susequent reboots it wont show a screen ,I cant console switch as when I switch back no display (monitor appears to switch modes then dies) however with vanilla kernel everything appears fine I m going to investigate furthur with process of elimination 
With regards to your problem double check you enabled support for your file system , as I missed that when I first installed the 3.8 version as journeled file system support is in a subdir of the filesystem menu (im running reiser)..,
Hope you get it working as the elevated low latancy patch etc make things very responsive ..and apart from the above issue (which isnt a problem if you dont want to reboot or go to a console ) it is very stable

Compiled Wolk 4.0 rc2 and no trobles...
