Gosh, I'm sooooooo confused & frustrated that it's just sucks.
I've includes my full hardware list + my current configurations.
Could you please recommend me on the kernel of choice.

Here we go :

I don't think you'll have a problem with gentoo-sources-2.6 kernel.

if you're new, you should try gentoo-dev-sources along with genkernel

Well, I'm not new but I'm not an expet either.

For example 2.6.12-rc2-vivid1 has two different version's : vivid-sources-2.6.12_rc2-r1.ebuild & ati-8.12.10-for-2.6.12-rc2-love1_test1.tar.bz2
Because I do have an ATI i'm confused by it, should I emerge the first one and then the second, or maybe just the second ebuild? and how does it comes into account when I'm building the kernel, does one uses the closed ati driver & the other doesn't? how should I then configure my xorg.conf to implement this ?

as you see I'm confused, this is the reason for this post.
