ok so everything's installed and ready, all I need now are apps,

what are you recommendations for a good:

music player (I'm not a huge fan of amarok)
picture editor
something-to-run-winx-games-on (if it's possible)

as well as all the other good stuff I haven't thought of, I'll probably add more later as I think of them

music and video player : mplayer

there is a gui in it, but I really recommend you use the console interface.

picture editing : I guess I should say gimp here, but I really don't use anything like this.

running windows games : wine (or if you can afford it, cedega)

I've decided to use xmms because it looks similar to winamp, (I'm not fussy)
I tried mplayer and it crashed when I tried to change skins,... ghey, but still, is it worth replacing kaffeine with (for movies, not music)

next, I need an irc client

video: mplayer but xine for DVD's

The others are off topic (slap) IMHO this should have been in Gentoo Chat but I'm not a moderator so I can't do anything about it :-/.

Don't be so hard on the gui, it's gotten better in recent builds.

But the console interface is wonderful :)
As far as I'm concerned, they could get rid of the gui.

Am I missing out on some kind of magical CLI, or are you just so against the gui that you prefer typing in all those worthless flags, just to switch dvd players or protocols or whatever?

The mplayer CLI is quite simple in my opinion, and the man page is one of the most complete.
There are some things that really can't be done with the GUI (or at least couldn't), such as
good positioning of subtitles.

music player = moc (music on conslole ) or xmms
pictureviewer = gview
