I do not believe that all the kinks are worked out of 64bit in portage so I would like to know what processor to define in make.conf for a 32 bit kernel on an amd64 processor.

then will work as long as u hav normal x86 cflags and 32bit gentoo

It worked with me.
I have now a 2005.0 x86 install on a AMD64 machine. No sweat.

I heard that using the pentium 4 option is good because it has all the options of a amd64 without the 64bit. Is this good?

Just use -march=k8. It will still compile 32-bit binaries (need to change your CHOST, as well as some other things, to get it to 64-bit).

Though, I have to say, I have no problems with my 64-bit install.

Just get an x86 stage* and use the -march=k8 CFLAG. Nothing more is needed.
