I am in the process of installing Gentoo on my Dell PowerEdge 1800 with two 3GHz Xeon processors. I am at the point of manually configuring the kernel and I am not sure whether to pick Generic-x86-64 or Intel EMT64T as the Processor family. According to:
http://gentoo-wiki.com/HOWTO_INTEL_XEON_WITH_EM64T_Optimizations
I should choose the following option:
Kernel Options
Setting the correct Processor Family:
( ) AMD-Opteron/Athlon64
(X) Intel x86-64
( ) Generic-x86-64
However, Intel x86-64 is not an option here...in its place is the Intel EMT64T option. I am assuming that means I need to pick Intel EMT64T, but I want to make sure before I move forward.

Your assumption is correct, EMT64T is the newer name Intel invented so they don't sound like they just copied AMD64 (which they most certainly did).
They even tried to get it called IA-32e at first, but everyone just laughed at that ridiculous nonsense.
