Several choices out there, and I don't know anything about them.

I just want something to look inside binary files with maybe the
ability to view data in alternate ways (and make an occasional
change).

It really depends on what you want.

ghex is a nice Gnome application; khexedit is OK if you use KDE; also look at lfhex.

app-editors/hexedit is a curses app, as is app-editors/hexcurse.

http://www.vim.org/htmldoc/usr_23.html#23.4 describes how to edit binary files in vim; without a doubt emacs has a hex mode.
