Roughly:
i386 = 80386 and later
i486 = 80486 and later
i586 = Pentium and later
i686 = Pentium Pro/Pentium II and later.
Compiling for the i386 architecture when you have a Pentium III would work (yes, it is i386 compatible) but would not take advantage of P-III specific capabilities. You want i686.
