How can I mount multiple hard drives in one folder? I want to have my /home/shares file to have around 500gb, but I want to be split between my two 250gb hard drives. How do I go about doing that?

What you want is LVM. You can add both drives to a physical volume, then create one large logical volume from them. These web pages will be useful:

Yes, you will. And depending on which filesystem you choose, you can even grow the logical volume without unmounting the partition. I know you can do this with reiser3. The last time I tried it with ext3 it couldn't be done, but that was using RedHat Enterprise Linux 4 over a month ago (so it probably still can't be done).

Redundant Arrays of Inexpensive Disks are an option, but he wasn't asking about mitigating disk failures. What you're suggesting is possibly Linear RAID or RAID-0, which will give him the use of all of his physical drive capacity but no redundancy. And I don't see anywhere that adding a disk to Linear or RAID-0 is possible (but I could be wrong).
