When I try to edit something with gedit through sudo i get this message:
(gedit:8142): Gtk-WARNING **: cannot open display:

But when I open without sudo with a normal user or with root it is no problem.
I think that it is annoying to go in on root access to edit a system config.
su - doesn't work either, it gives the same message.

How can I fix this problem?

How were you using su - ?
Not sure why it would do that.
try su -c
