Okay, just about to wipe my Windows machine and install Gentoo ago. Been checking the forums and undecided on what filesystem to use. There are mixed feelings on ReiserV4 so should I go for ReiserV3 or XFS. Ext3 seems a bit slow, but is also very stable. Your thoughts would be appreciated.

ext3 can be speeded up.

I use:

reiser3 on /
ext2 on /boot

If you put /boot on a separate small partition, it's better for security, and there's no need for a journalled file system because you hardly ever write to it.
