I have 3 NICs towards my LAN and I wonder if I should have different subnets for all 3 or if I should have only one subnet and make the computer act as a switch with those NICs (if possible?)?
if I should make it switch, what software should I use?

I'd use bridging (what you are refering to by "switch" is actually a bridge), in-fact I do use bridging (its much easier and doesn't look like you need multiple subnets).
