Hi i recently installed gentoo, but after doing some reading i think i may have initially compiled it incorrectly for my hardware, i set the CHOST to i386 and i'm not sure if think it should be i686 as i've got a pentium 4 2.8 processor.

should it be i686 ? and if i change my make.conf to i686 what command to i need to run to make all packages recompile+dependencies.

you could change it, but i386 works fine too. You did set -mtune=pentium4 so you do get most of the optimisations for your cpu.
If you do change it a emerge -e world would be advisable.

most things i use seem to work (apart from xgl) and it all seems to be really stable, what differences will i notice by changing it to i686 ?

essentially nothing id imagine, under the hood some code might be compiled differently but id imagine you wouldnt notice any real-world improvements.
