What are alternatives to MS Sharepoint on Gentoo? I need some sort of enterprise class web-capable app that allows people to share files (and I don't want simple shared folders or any of this sort) and coordinate workflow.

Plone is a CMS that has very good support for workflows. It is, however, more aimed at web oriented uses (newspapers, corporate pages, online clubs). I use it at work for a IT dept. intranet (knowledge base/file storage/our pc inventory).
If you're going to be passing around lots of word, excel, etc. you may find that a lot of the OSS tools will treat these as opaque binary objects (for example svn would by default). It's something you'll probably want to investigate. Most OSS tools really work awesome with text, put so far in my business life... its been all MS Office formats.
Look into this plone documentation page if you need that word/excel support. |

yes, that is the problem, I really would like a web based tool for authoring, passing around and modifying 'standard' business documents (i.e. PDF, Word, Excel, OpenOffice documents).

Check out Alfresco...

It's a great product including multiple document type support, web and CIFS interface, workflow, and very easy to setup. |
