Don't know for sure but I think the installer will just install the base system.
You need to emerge your grafical envirronment and then emerge openoffice.
Use the wiki for the how to's.
Some grafical user interfaces are KDE/Gnome/...
Good luck |

if its the full live cd (the 600+ mb one) then you should either get the GUI or an error saying why the gui couldnt start. if you are getting an error, tell us what it is so we can try to help with that. |

Thats probably your lot! I have never used the graphical installer either, but I would hope it didnt force X on you.
ext job would be to emerge xorg-x11 (graphics) and then a browser (firefox? maybe use firefox-bin, its a big package and will take a long time to compile) and then you can be searching the forums for apps to do what you wish (please dont be a noob and ask what the best is, do some research yourself ) Openoffice is also available in a -bin version, highly recommended as it takes many hours to compile on a dual core monster, let alone a pII.

Good place to start is the set of Gentoo Docs about setting up your desktop: http://www.gentoo.org/doc/en/index.xml?catid=desktop
There's a great guide there for getting X up and running, as well as how to get 3d accelleration and your window/desktop manager of choice going.
