I have an old intel LG-440LX server board. I am currently running 2x600(6x100). On this machine I run apache and cacti and NAT / Router stuffs. I do not use this machine for a desktop at all.

What Processor would be the best (this is what I have lying around)

1 x 733 / 256 cache

2 x 600 / 256 cache

1 x 500 / 512 cache

I would stick with the two 600MHz processors.

I'll agree with yabbadabbadont and say go with the two 600MHz processors. Don't forget to enable SMP in your kernel!

I thought that was the best bet.. I found a 1.1 or a 1.3 as well... BUT I have replaced the system in question with a dual Xeon 1.7. It is an older system, but I feel it is not performing how it should.

To me, this is a strange breed of Xeon... I'm not even sure if I should be using the pentium4 flag, I mean there is not ht or sse3...

can someone help me out?

Only the Northwood and Prescott Xeons have support for hyperthreading and only the Prescotts have SSE3. You seem to have one based on the Willamette core, so just set the -march=pentium4 option and be done with it.
For more details, you can check out the GCC manual and Wikipedia on Pentium 4s and on Xeons.

I found out that it is a foster core... they are SL5TE's, so sounds like -pentium4 will give me all the flags I need then?

Foster == Willamette, just that Willamette is Desktop and Foster is Server.
