After upgrading to Squirrelmail 1.4.0 (masked, but in Portage), I was still dissatisfied with the overall speed. The login page, display preferences, and everyhing else non-mail-specific loaded quickly and perfectly, but opening folders or messages and even just viewing the first screen was slower than I could tolerate.
Then I found this page on the Squirrelmail site. It indicates that, for computers on which both Squirrelmail and the IMAP server reside, that "localhost" should not be used in server settings -- use 127.0.0.1 instead.
I tried it, and lo and behold it worked! Everything loads nice and quickly for me, and I'm a happy camper.

whoot! you da man!
This not only made mine faster, but it fixed a problem I was having with Squirrelmail chrooted. It wouldn't save preferences or identities. I did as you suggested (changing localhost to 127.0.0.1), and it was faster, but better yet, I could logout and back in and see my preferences! Greetings!
Something else I helped myself with to speed up squirrelmail. I found out that at it performs automatic purge on every action. Now in the 1300 messages I have and several "deleted", the slow remote server just wasnt much of a help at the "purge" command - it never purged. So, instead of clean up once and then never again it kept on purging the messages - that took about 5-6 seconds. After I removed automatic purge option, the thing started running like clockworks. Opensource saves the day again
Server is Netscape Communicator (i think) and it runs on 300-400MHz Pentium class machine.
