as part of sorting out a networking problem Id like to turn this on . Ive got syslog-ng installed FWIW
Can anyone tell me how - theres lots of stuff on why it should be turned OFF butnothing I can find on turning it ON

syslog-ng wont do this. You need to run a packet sniffer.

install dnsmasq and use it as your local dns caching proxy.
Have it configured with 'log-queries'
