I'm going ot be installing gentoo as an esx server host and I'm wondering if there are any special considerations, like what kernel options do i compile as my video, network, hard drive, and chipset? Do I need to compile vmware-modules ot do i install vmware-tools since all i see is a masked vmware-workstation-tools ebuild?

This is impossible. The ESX server is a reworked RedHat.
It's not installable software, it's a complete Linux distribution.
It can not be installed on Gentoo.
You could however install a Gentoo guest on a ESX host, or install vmware-server/vmware-workstation/vmware-player on a Gentoo host.

Moved from Installing Gentoo to Other Things Gentoo.
Not about getting gentoo installed, so moved here.
