On my machine at work, I built the kernel with
CONFIG_I2C=m
CONFIG_I2C_PROC=m,
emerged i2c, lm_sensors and wmsonsormon and I have nice readouts of temps and fan speeds on my desktop. I did the same thing on my machine at home EXCEPT I didn't emerge i2c (out of an oversight) and I still get nice temp and fan speed readouts.

The question is, do I really need i2c? Can I unemerge it?

[The reason for this is because when I do
emerge --deep -p -U world
I get messages saying it can't create a DEPGRAPH because of dependency problems with lm_sensors and i2c. Pfui.]

the i2c ebuild patches your kernel with the latest i2c patches, the kernel only carries the latest version of i2c at the tim the kernel was released. If it works fine using the patches allready in your kernel then there is no need to emerge i2c.
