I bought a Mac Mini Core 2 Duo with the sole purpose of making a Gentoo web server, I have no intention of keeping OS X on there so my question is do I have to install rEFIt still to install Gentoo, or can I just straight up wipe that hard drive out and the Mac will detect Gentoo (as per the EFI spec to read the MBR if no EFI decriptors exist).

rEFIt and bootcamp are only needed if you use OS X. You can install fine without them. Just partitioning with fdisk or gparted will do it.
