How can this be done via portage. I've emerged sasl as well as cyrus-sasl, and sasl is included in my USE flags in make.conf.
Yet, openldap keeps compiling (via emerge) without sasl authentication support!
Any suggestions?

Yep, two things you need to do:
First, you need to make certain cyrus-sasl version 1.5.27 is installed, not 2.1.13. cyrus-sasl 2.1.* only works with openldap-2.1 and later, and the openldap-2.1 build is masked because of problems with db4.
Second, you need to edit /usr/portage/net-nds/openldap/openldap-2.0.27-r4.ebuild and change "-without-cyrus-sasl" to "-with-cyrus-sasl". Then 'emerge openldap' again and sasl should be recognized.
I've uploading a new ebuild for this (openldap-2.0.27-r5) to bugs.gentoo.org (24319), but I don't know when/if it'll roll out.
