Guide to setting up Email

Is there a guide out there to set up email from scratch? I'm talking base system and setting up sendmail, SSL, apache, and squirrelmail for a full blown IMAP, POP3 MTA etc. mailserver... I can't seem to find any good docs out there, and its not an easy process. Thanks.
