Why is it that the loopback device is not to be found in the in-kernel alsa drivers? Am I looking in the wrong place? I would assume that in the menu config it would be listed under "Generic Drivers".

No, SND_DUMMY is just a dummy device mainly used by developers for testing. I need SND_ALOOP. It creates a virtual device that loops back what is being played back on the soundcard so that it can be recorded.
