I'm looking for the default font found in Fedora. At size 10 it looks really nice. It's called "Sans", but my "Sans" is a lot thinner.

Isn't it DejaVu Sans (media-fonts/dejavu)?

Remember that on Fedora automatic hinting is used, while on Gentoo media-libs/freetype is usually emerged with -bindist, increasing quality of some TrueType fonts.

It is an USE flag of media-libs/freetype which disables subpixel hinting and TrueType bytecode support. These features make font quality better, but they are patented in the US and FreeType binaries built without this USE flag may not be distributed there.

bindist builds the package for binary (re-)distribution, which is what you are not allowed to do with the patented code. Turning off the bindist USE flag turns on the improved rendering features. It is off by default in Gentoo desktop profiles and that's almost always what you want.
