My question in a phrase: Are there any ways to do a remote Gentoo installation without ever needing a keyboard/monitor attached to the installation machine?

Clarification: I'm not a sys-admin, but I end up installing Gentoo on a lot of servers that don't use X11 or a desktop environment. My typical installation process is like this: put in the minimal install CD, boot up, change the root password, activate the sshd server, login from another computer, and then go through the handbook installation process. This is mostly fine, but it seems to me like a real pain that I actually have to haul a monitor and keyboard over to the installation machine, connect it up, and then manually start the sshd daemon, when the entire installation process is done through ssh and the server itself will only be used remotely after installation.

Is there something like a "remote installation" version of the minimal install CD, or some other trick, that would allow me to avoid needing local keyboard input and graphical output?

If one does not already exist, it should not be hard to create. Unpack the existing minimal CD, change the initscripts to your liking, rebuild the ISO, and burn it. If you are building many machines like this, perhaps you would be better served by PXE booting them and keeping a standard Gentoo base that you can untar to get an initial system close to how you like it.
