noticed new gentoo sources released...will it smoke my pc?

Just wondering if updating gentoo-sources will cause mass hysteria within the box? As in problems with hardware working, boot issues, sound issues, etc.

or is it as simple as "emerge -U world"?

Emerging and configuring/compiling kernel-sources are always two different things. Portage doesn't recompile your kernel - never.
