thats what i am looking for in openvz-sources-2.6.27.7.1 kernel. i cannot find for the life of me... where are those options?

Well, that doc is from 2007 and the related kernel 2.6.27.7, is quite old. Perhaps you should be getting the kernel from upstream rather than gentoo's packages. Kernel sources are quite easy to manage outside of portage. Further I bet if you hacked out solutions to problems you had and provided the gentoo openvz maintainers some updates, they might update the docs and the package and you might make a significant contribution to the community without much more work! Please consider it.
