I have a monitor that according to specs supports up to 1600x1200.
I have the following in xorg.conf:

When I start xorg with the monitor powered down, and later power it up, the resolution in 1600x1200.
However, when I start Xorg with the monitor connected, I get 1920x1440, which the monitor clearly doesnt' like (parts of windows are not shown, text on menus disappear, ...). From the output below, it look like the nouveau driver first gets DDC information correctly, but then also gets something called 'probed modes' and decides to use these instead, totally ignoring what's in my config file.

How can I force my driver to not exceed the monitors capacity ?

You can try two things:
  1. Set the Identifier of the "Monitor" section to "VGA-1"
  2. Put a PreferredMode option and set it to 1600x1200 (see man xorg.conf for details).
