what kernel version?
You can also use "make config". It isn't that pretty, but will probably work.
There is also the genkernel tool.

The interface isn't that nice, but it will work.
I think you need ncurses to use make menuconfig -- have you emerged it?

do you have X configured yet?
If you do, try running make xconfig
