Can I get a brief explanation of what the difference is between the kernles at gentoo-sources vs kernel.org's? I noticed that gentoo-sources is behind kernel.org when it comes to stable and long term kernels. Are gentoo-sources tweaked somehow before being released to us? I see a reference to Gentoo patchset but can't seem to find what it is. Is it safe for me to just use the most recent stable kernel from kernel.org?
For example, kernel.org lists the most recent stable as 3.16 and longterm as 3.14.15. Gentoo-sources has stable as 3.14.14.

A good way to get into the what-the of things is often looking into the ebuild. From /usr/portage/sys-kernel/gentoo-sources/gentoo-sources-3.16.0.ebuild you can see that there is a reference to a homepage for the 'genpatches', which is http://dev.gentoo.org/~mpagano/genpatches and will likely answer most(?) of your questions regarding them.
If not, do not hesitate to ask for more!
Other patch-sets exist, too, such as the ck-sources, which I personally am a fan of. I believe it should be rather safe to use the 'vanilla' sources, and incidentally, we actually have sys-kernel/vanilla-sources in the tree, which I believe are the kernel.org sources without the genpatches (I can't say I've actually looked into the differences myself, so I can't outright list them without reading up on things I'm pointing at here myself).
